Fall harvest has bountiful health benefits!


The gorgeous colors of fall's fruits and vegetables come from carotenoids, but these natural pigments aren't just window dressing: Some may also fight cancer. Studies have shown that diets rich in beta-carotene, lutein, and zeaxanthin (carotenoids) help reduce the risk of developing the most common form of kidney cancer by up to 26%. Women with high levels of these plant chemicals have a lower risk of ovarian cancer, and men are are less likely to get lung cancer.
Best Sources: carrots, sweet potatoes, most winter squash (butternut, pumpkin, etc...) peppers, and tomatoes. Pumpkin seeds are particularly high in disease-fighting plant chemicals called phytosterols, so be sure to roast them after you carve.
