Invasion of the Zuchini!!



Well, we knew it was coming...the zuchini are here!! Yes folks, it's that time of year when we all have more zuchini than we can possibly eat; when everyday they seem to be multiplying exponentially on your plants and you're pulling out your recipe books to find ways to use them all. There will be plenty at Farmer's Market this week - just look at the list. Let's hear about some unusual recipes you've tried with zuchini. Here's one I have not tried but, it sounds great.

Choco-Zuchini Cupcakes

2 cups shredded zuchini

3 eggs
2 cups sugar
3/4 cup cooking oil
2 tsp. vanilla
2 cups all purpose flour
2/3 cup unsweetened cocoa powder
1 tsp.baking soda
1 tsp. salt
1/2 tsp. baking powder
3/4 cup chocolate chips

Stir together zuchini, eggs, sugar, oil & vanilla. Add flour, cocoa, baking soda, baking powder, and chocolate chips and stir until well combined. Spoon into prepared muffin cups and bake in a 325* oven for 25 minutes or until done to your liking. Top with frosting if desired.
